- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cups mixed vegetables (like peas, corn, and green beans)
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the sliced carrots and celery, cooking for another 5 minutes.
- Pour in the vegetable broth and add the diced tomatoes, basil, and oregano.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the mixed vegetables and cook for an additional 10 minutes, seasoning with salt and pepper to taste.
- Serve hot.
