Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
  2. Place the browned roast in the slow cooker and add in the beef broth, carrots, potatoes, onion, garlic, thyme, rosemary, salt, and pepper.
  3. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.
  4. Shred the beef with two forks and return it to the slow cooker. Stir to combine with the juices.
  5. Serve hot.

  • For best results, use a good quality beef broth.
  • Feel free to add other vegetables such as celery or parsnips.
