- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 4 cups beef broth
- 1 cup carrots, chopped
- 1 cup potatoes, diced
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
- Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
- Place the browned roast in the slow cooker and add in the beef broth, carrots, potatoes, onion, garlic, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or until the meat is tender and easily shredded.
- Shred the beef with two forks and return it to the slow cooker. Stir to combine with the juices.
- Serve hot.
Notes
- For best results, use a good quality beef broth.
- Feel free to add other vegetables such as celery or parsnips.
