- 1 pound ground beef
- 4 cups beef broth
- 3 medium carrots, chopped
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped parsley
- In a skillet, brown the ground beef over medium heat, then drain excess fat.
- Transfer the beef to the slow cooker.
- Add carrots, potatoes, onion, garlic, broth, Worcestershire sauce, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours, or high for 3-4 hours.
- Stir in parsley before serving.
Notes
- Feel free to add other vegetables like peas or green beans.
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir into the stew before serving.
