Ingredients

  • 1 pound turkey bacon
  • 1 cup chopped onion
  • 2 cups frozen corn
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same skillet, sauté the chopped onion until soft.
  3. In the slow cooker, combine the turkey bacon, sautéed onion, corn, black beans, diced tomatoes, chili powder, garlic powder, cumin, salt, and pepper.
  4. Mix well and cook on low for 4-6 hours.
  5. In the last 30 minutes of cooking, sprinkle cheddar cheese on top and let it melt.

Notes

  • For extra flavor, add a dash of hot sauce.
  • Feel free to substitute ground turkey or beef if preferred.
