- 1 pound turkey bacon
- 1 cup chopped onion
- 2 cups frozen corn
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 2 cups shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- salt and pepper to taste
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In the same skillet, sauté the chopped onion until soft.
- In the slow cooker, combine the turkey bacon, sautéed onion, corn, black beans, diced tomatoes, chili powder, garlic powder, cumin, salt, and pepper.
- Mix well and cook on low for 4-6 hours.
- In the last 30 minutes of cooking, sprinkle cheddar cheese on top and let it melt.
Notes
- For extra flavor, add a dash of hot sauce.
- Feel free to substitute ground turkey or beef if preferred.
