- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons vegetable oil
- Heat the vegetable oil in a skillet over medium-high heat. Brown the beef cubes on all sides.
- Transfer the browned beef to the slow cooker.
- Add the carrots, potatoes, onion, and garlic to the slow cooker.
- Pour in the beef broth, Worcestershire sauce, and add salt, pepper, thyme, and bay leaf.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew in the last 30 minutes of cooking.
