Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a skillet over medium-high heat. Brown the beef cubes on all sides.
  2. Transfer the browned beef to the slow cooker.
  3. Add the carrots, potatoes, onion, and garlic to the slow cooker.
  4. Pour in the beef broth, Worcestershire sauce, and add salt, pepper, thyme, and bay leaf.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 8 hours or on high for 4 hours.
  7. Remove bay leaf before serving.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew in the last 30 minutes of cooking.
