- 3 pounds beef chuck roast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 1 cup carrots, chopped
- 1 cup potatoes, chopped
- 1 medium onion, quartered
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Season the beef roast with salt and pepper.
- Place beef in the slow cooker and add the beef broth.
- Add carrots, potatoes, onion, garlic, thyme, and rosemary.
- Cover and cook on low for 8 hours, or until beef is tender.
- Once done, remove the roast and let it rest before slicing.
- Serve with the vegetables and broth.

- For a richer flavor, sear the beef roast in a skillet before adding it to the slow cooker.
