- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) crushed tomatoes
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- 1/4 cup fresh parsley, chopped
- salt to taste
- black pepper to taste
- 8 ounces spaghetti or linguine
- In a large pot, heat olive oil over medium heat. Add onions and cook until softened.
- Add garlic and cook for an additional minute.
- Stir in crushed tomatoes, red pepper flakes, oregano, salt, and pepper. Simmer for 10 minutes.
- Meanwhile, cook pasta according to package instructions. Drain and set aside.
- Add shrimp to the tomato mixture and cook until pink and opaque, about 3-4 minutes.
- Incorporate the cooked pasta into the shrimp and sauce mixture. Toss to combine.
- Garnish with fresh parsley and serve immediately.
Notes
- For added heat, increase the amount of red pepper flakes.
- Substitute shrimp with other seafood like scallops or calamari.
