Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 slices turkey bacon, chopped
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add onion, bell pepper, and garlic and sauté until soft.
  3. Add the shrimp to the skillet and cook until pink.
  4. Stir in the rice, chicken broth, Cajun seasoning, black pepper, and salt. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until the rice is tender.
  6. Mix in the cooked turkey bacon before serving.

Notes

  • Adjust the seasoning to your taste.
