- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 tablespoon tomato paste
- 1 cup chicken broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped
- 1/4 cup fresh parsley, chopped
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, bell pepper, and celery; sauté until softened.
- Stir in the garlic and cook for another minute.
- Add the diced tomatoes, tomato paste, chicken broth, Worcestershire sauce, Cajun seasoning, salt, and pepper; bring to a simmer.
- Cook for about 10 minutes until sauce thickens.
- Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
- Stir in the green onions and parsley before serving.
Notes
- Serve over rice for a complete meal.
- Adjust the spice level by modifying the Cajun seasoning.
