- 2 pounds beef shank
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 cups beef broth
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, heat the olive oil over medium heat.
- Season the beef shank with salt and pepper, then sear it in the pot until browned on all sides.
- Add garlic and onion, sautéing until they soften.
- Pour in the beef broth, then add thyme and rosemary.
- Cover the pot and transfer it to the oven.
- Roast for about 2 to 3 hours, or until the meat is tender.
- Remove from the oven and let it rest before serving.

- For extra flavor, marinate the beef overnight.
