- 2 cups diced potatoes
- 1 small head of cabbage, chopped
- 1 cup turkey bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup shredded cheese (optional)
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the turkey bacon until crispy, then set aside.
- In the same skillet, sauté the onion and garlic until translucent.
- Add the diced potatoes and chopped cabbage, seasoning with salt, pepper, and paprika.
- Stir in the turkey bacon and mix well.
- Transfer the mixture to a baking dish, top with cheese if using, and cover with foil.
- Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool slightly before serving.
Notes
- For a vegetarian option, omit the turkey bacon.
- Can be prepared ahead of time and stored in the refrigerator before baking.
