- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
- 1/2 cup light corn syrup
- 1/4 cup brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Pour the cream cheese mixture over the crust.
- In a separate bowl, combine pecans, corn syrup, brown sugar, salt, and cinnamon. Spoon over the cheesecake.
- Bake for 50-60 minutes or until the edges are set. Cool completely before refrigerating.
- Serve chilled and enjoy!
Notes
- For a richer flavor, use dark brown sugar instead of light.
- Make sure the cream cheese is at room temperature for smooth mixing.
