- 1 pound turkey bacon
- 1 cup chopped onion
- 1 cup diced carrots
- 1 cup diced celery
- 4 cloves minced garlic
- 2 cans cannellini beans, drained and rinsed
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup small pasta (like ditalini)
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
- In the same pot, add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for another minute.
- Add cannellini beans, diced tomatoes, chicken broth, basil, and oregano. Bring to a boil.
- Stir in pasta and cook until al dente.
- Return the turkey bacon to the pot and season with salt and pepper before serving.
