Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  2. Add broccoli florets and shredded carrots. Stir and cook for a few minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
  4. Add heavy cream and bring back to a simmer.
  5. Stir in shredded cheddar cheese until melted and combined.
  6. Season with black pepper and garlic powder.
  7. Serve hot, garnished with crumbled turkey bacon on top.
