- 2 pounds beef stew meat
- 4 cups beef broth
- 2 cups water
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup diced potatoes
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, brown the beef stew meat over medium heat.
- Add the beef broth and water, and bring to a boil.
- Reduce heat and let simmer for about 1 hour.
- Stir in the carrots, celery, potatoes, tomatoes, thyme, salt, and pepper.
- Continue to simmer for an additional 30 minutes, or until vegetables are tender.
- Serve hot and enjoy!
Notes
- For a richer flavor, use homemade beef broth.
- Add more vegetables as desired, such as green beans or corn.
