Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups potatoes, peeled and cubed
  • 1/2 cup sour cream
  • 1/4 cup butter
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper.
  3. Shape the mixture into a loaf and place it in a baking dish.
  4. Bake for 1 hour or until fully cooked.
  5. While the meatloaf bakes, boil the potatoes in salted water until tender.
  6. Drain the potatoes and mash them with sour cream and butter.
  7. Stir in half of the shredded cheese into the mashed potatoes.
  8. Once the meatloaf is done, top it with the remaining cheese and return to the oven for an additional 10 minutes.
  9. Serve meatloaf slices with a generous scoop of cheesy mashed potatoes.

Notes

  • For extra flavor, add Worcestershire sauce to the meatloaf mixture.
  • Feel free to use turkey or chicken instead of beef for a lighter option.
