- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/4 cup butter
- 1 cup shredded cheese
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine ground beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper.
- Shape the mixture into a loaf and place it in a baking dish.
- Bake for 1 hour or until fully cooked.
- While the meatloaf bakes, boil the potatoes in salted water until tender.
- Drain the potatoes and mash them with sour cream and butter.
- Stir in half of the shredded cheese into the mashed potatoes.
- Once the meatloaf is done, top it with the remaining cheese and return to the oven for an additional 10 minutes.
- Serve meatloaf slices with a generous scoop of cheesy mashed potatoes.
Notes
- For extra flavor, add Worcestershire sauce to the meatloaf mixture.
- Feel free to use turkey or chicken instead of beef for a lighter option.
