Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh basil, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Set Instant Pot to sauté mode and heat olive oil. Add chicken and cook until golden brown on both sides. Remove and set aside.
  3. Add garlic to the pot and sauté briefly. Deglaze with chicken broth, scraping any brown bits off the bottom.
  4. Return chicken to the pot. Add heavy cream, sun-dried tomatoes, parmesan cheese, and Italian seasoning.
  5. Seal the Instant Pot and set to high pressure for 10 minutes. After cooking, do a quick release.
  6. Remove chicken, set the pot to sauté mode again, and reduce the sauce to desired thickness.
  7. Serve chicken with sauce and garnished with fresh basil.

Notes

  • For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce during the final sauté step.
  • Substitute heavy cream with full-fat coconut milk for a dairy-free version.
