- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh basil, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- Set Instant Pot to sauté mode and heat olive oil. Add chicken and cook until golden brown on both sides. Remove and set aside.
- Add garlic to the pot and sauté briefly. Deglaze with chicken broth, scraping any brown bits off the bottom.
- Return chicken to the pot. Add heavy cream, sun-dried tomatoes, parmesan cheese, and Italian seasoning.
- Seal the Instant Pot and set to high pressure for 10 minutes. After cooking, do a quick release.
- Remove chicken, set the pot to sauté mode again, and reduce the sauce to desired thickness.
- Serve chicken with sauce and garnished with fresh basil.

- For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce during the final sauté step.
