Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound beef sausage, sliced
  • 1 cup long-grain rice
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, bell peppers, and celery, cooking until tender.
  3. Stir in garlic and cook for another minute.
  4. Add the beef sausage and cook until browned.
  5. Mix in the shrimp and cook until just pink.
  6. Add rice, diced tomatoes, chicken broth, and Cajun seasoning.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Fluff with a fork, and season with salt and pepper before serving.
