- 3 medium sweet potatoes
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup walnuts, chopped
- 1/4 cup cranberry honey sauce
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon nutmeg
- Preheat the oven to 375°F (190°C).
- Peel and slice the sweet potatoes into thin rounds.
- In a large skillet, sauté the garlic and spinach until wilted.
- In a baking dish, layer sweet potatoes, sautéed spinach, ricotta, and walnuts.
- Repeat layers until ingredients are used, finishing with a layer of sweet potatoes.
- Drizzle cranberry honey sauce on top and season with salt, pepper, and oregano.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes.
- Let cool for a few minutes before serving.
Notes
- For added flavor, sprinkle some cheese on top before baking.
- Feel free to substitute spinach with other greens like kale or Swiss chard.
