- 4 boneless, skinless chicken breasts
- 6 slices turkey bacon
- 2 cups fresh spinach
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- Cook the turkey bacon in a skillet until crispy and crumble it into small pieces.
- In the same skillet, sauté the fresh spinach until wilted.
- Combine the crumbled turkey bacon, sautéed spinach, and cheese in a bowl.
- Carefully slice a pocket in each chicken breast and stuff them with the bacon-spinach mixture.
- Drizzle olive oil on the outside of the chicken breasts and season with garlic powder, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Let rest for a few minutes before slicing and serving.
Notes
- For extra flavor, marinate the chicken breasts for a few hours before cooking.
