Ingredients

  • 1 head green cabbage
  • 8 ounces egg noodles
  • 6 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large pot, cook the chopped turkey bacon on medium heat until crispy, then set aside.
  2. In the same pot, add olive oil and sauté onions and garlic until translucent.
  3. Next, add the chopped cabbage and cook until wilted.
  4. Stir in the egg noodles, cooked bacon, salt, pepper, and vinegar.
  5. Add water as necessary, cover, and simmer until the noodles are done.
  6. Taste and adjust seasoning if needed before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Can be served with sour cream for added richness.
