  • 2 packages (3.4 oz each) coconut cream instant pudding mix
  • 1 can (20 oz) crushed pineapple, with juice
  • 1 can (14 oz) sweetened condensed milk
  • 1 jar (16 oz) maraschino cherries, well drained and chopped
  • 3 cups mini marshmallows
  • 1 container (16 oz) frozen whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F (175°C) and toast the chopped macadamia nuts on a baking sheet for 4-6 minutes. Let cool.
  2. In a large bowl, mix the pudding mix, crushed pineapple with its juice, and sweetened condensed milk until well combined.
  3. Fold in the maraschino cherries, marshmallows, whipped topping, and toasted macadamia nuts until fully incorporated.
  4. Cover and chill in the refrigerator for at least 4 hours before serving. Garnish with additional whipped cream, nuts, and cherries if desired.

Notes

  • For a less sweet version, use unsweetened whipped cream and add 1-2 teaspoons of coconut extract for flavor.
