- 1 pound ground beef
- 4 slices turkey bacon
- 1 cup chopped onions
- 3 cloves garlic, minced
- 2 cups mixed vegetables
- 1 can (15 oz) diced tomatoes
- 1 cup shredded cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup cooked rice
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the turkey bacon until crispy. Remove and crumble.
- In the same skillet, brown the ground beef with onions and garlic.
- Add mixed vegetables, diced tomatoes, and seasonings. Stir to combine.
- Mix in the cooked rice and half of the cheese.
- Transfer the mixture to a baking dish. Top with crumbled bacon and remaining cheese.
- Bake for 25-30 minutes until heated through and cheese is melted.
- Let cool for a few minutes before serving.
