- 4 medium zucchini
- 1 pound shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Preheat the oven to 400°F (200°C).
- Slice the zucchini in half lengthwise and scoop out the center.
- In a skillet, heat the olive oil over medium heat and add the garlic.
- Add the shrimp, paprika, salt, and pepper, and cook until the shrimp is pink.
- Stuff the zucchini halves with the shrimp mixture and top with Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, until the zucchini is tender.
- Garnish with fresh parsley before serving.
Notes
- For a spicy kick, add red pepper flakes to the shrimp mixture.
- Can substitute shrimp with other seafood if desired.
