- 1 pound large shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 cup cold sparkling water
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Vegetable oil for frying
- Prepare the shrimp by peeling and deveining them.
- In a bowl, mix the flour, cornstarch, baking soda, and salt.
- Add cold sparkling water to the dry ingredients and mix until just combined.
- Heat the vegetable oil in a deep pan to 350°F (175°C).
- Dip each shrimp into the batter, allowing excess to drip off.
- Carefully place the shrimp in the hot oil and fry until golden brown, about 2-3 minutes.
- Remove shrimp and drain on paper towels.
- Serve hot with a dipping sauce.
Notes
- For a crunchier texture, use very cold water in the batter.
- Don’t overcrowd the frying pan; fry in batches if necessary.
