- 1 pound large shrimp, peeled and deveined
- 1 cup sweetened shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 2 cups vegetable oil (for frying)
- In a bowl, mix together flour, garlic powder, salt, black pepper, and cayenne pepper.
- In another bowl, beat the eggs.
- In a third bowl, combine the coconut and panko breadcrumbs.
- Dip each shrimp first in the flour mixture, then in the eggs, and finally in the coconut mixture.
- Heat the oil in a large skillet over medium-high heat.
- Fry the shrimp in batches until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve hot with your choice of dipping sauce.
