- 2 fillets salmon
- 4 slices turkey bacon
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1 teaspoon garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Cook the turkey bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
- In the same skillet, add olive oil and garlic, and sauté for about 1 minute.
- Add the salmon fillets to the skillet and sear for about 4-5 minutes on each side, then remove and set aside.
- In the skillet, pour in the heavy cream and add sun-dried tomatoes, spinach, and Italian seasoning. Stir well.
- Add the salmon fillets back to the skillet and spoon the sauce over them. Cook for an additional 2-3 minutes until heated through.
- Crush the cooked turkey bacon and sprinkle on top before serving.
Notes
- This dish pairs well with pasta or rice.
- For additional flavor, consider adding capers or lemon juice.
