Ingredients
1 pound boneless, skinless chicken breasts
1 can black beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes with green chilies
1 packet taco seasoning
4 cups chicken broth
1 cup heavy cream
1 cup shredded cheese
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
Instructions
In a large pot, heat olive oil over medium heat. Add the onion, garlic, and green bell pepper. Sauté until softened.
Add the chicken breasts, taco seasoning, chicken broth, black beans, corn, and diced tomatoes. Bring to a boil.
Reduce heat, cover, and simmer for 20-25 minutes or until the chicken is cooked through.
Remove chicken, shred with two forks, then return to the pot.
Stir in heavy cream and cheese. Simmer for an additional 5 minutes until heated through.
