- 2 tablespoons olive oil
- 1 pound boneless chicken breasts, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons dried thyme
- Salt to taste
- Black pepper to taste
- 2 cups spinach, chopped
- 2 tablespoons fresh parsley, chopped
- Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned.
- Add the onion and garlic, cooking until fragrant and the onion is translucent.
- Add the sliced mushrooms and cook until softened.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and thyme. Season with salt and black pepper.
- Add the chopped spinach and simmer for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- This soup can be made ahead of time and tastes even better the next day.
- For a thicker soup, use less broth or add a cornstarch slurry.
