- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
- Add onions and garlic to the pot, cooking until softened.
- Stir in the broccoli florets and vegetable broth, bringing to a boil.
- Reduce heat and simmer until broccoli is tender, about 10 minutes.
- Blend the soup until smooth, then return to heat.
- Stir in the heavy cream, salt, pepper, and nutmeg. Cook until heated through.
- Serve hot, topped with crispy turkey bacon.
Notes
- For a lighter version, substitute heavy cream with coconut milk or eliminate it entirely.
- Can be made vegetarian by omitting turkey bacon.
