- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 6 cups chicken broth
- 1 pound cooked chicken, shredded
- 1 cup orzo pasta
- 2 cups spinach, fresh
- Salt to taste
- Black pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until they are soft.
- Add the garlic and thyme, and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken and orzo, and cook until the orzo is tender.
- Stir in the spinach and season with salt and pepper.
- Serve hot and enjoy!
Notes
- For added flavor, consider adding a squeeze of lemon juice before serving.
- This soup can be made in advance and tastes even better the next day.
