Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, diced
  • 2 cups fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the diced red bell pepper and cook until softened.
  3. Add the chopped spinach and cook until wilted. Stir in the shredded mozzarella and remove from heat.
  4. Cut a pocket in each chicken breast and stuff them with the pepper and spinach mixture.
  5. Season the outside of the chicken breasts with garlic powder, onion powder, salt, and pepper.
  6. Place the stuffed chicken breasts in a baking dish and cover with foil.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  8. Remove the foil in the last 5 minutes of baking to allow the cheese to brown slightly.
  9. Remove from the oven and let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken breasts for a few hours before stuffing.
  • You can substitute the mozzarella with other cheeses like feta or cheddar.
