1 pound ground beef
1/2 cup long-grain rice
1 egg
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 potatoes, diced
1 zucchini, sliced
4 cups beef broth
1 can diced tomatoes
1 teaspoon cumin
1 teaspoon oregano
Salt and Pepper to taste
Fresh cilantro for garnish
Instructions
In a large bowl, combine ground beef, rice, egg, chopped onion, minced garlic, cumin, oregano, salt, and pepper. Mix well.
Form the mixture into small meatballs.
In a large pot, bring the beef broth to a boil.
Add the meatballs and cook for about 10 minutes.
Add the carrots, potatoes, and zucchini. Simmer until the vegetables are tender.
Add the canned tomatoes and cook for another 5 minutes.
Serve hot, garnished with fresh cilantro.
