- 1 head green cabbage
- 1 pound shrimp, peeled and deveined
- 1 cup cooked rice
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/4 cup fresh parsley, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese
- 2 tablespoons olive oil
- Preheat your oven to 350°F (175°C).
- Boil cabbage leaves in salted water for 3-5 minutes until pliable.
- In a skillet, heat olive oil and sauté onion and garlic until translucent.
- Add shrimp and cook until pink, then stir in cooked rice, Cajun seasoning, and parsley.
- Place a portion of the filling onto each cabbage leaf, fold it up, and place in a baking dish.
- Top with diced tomatoes and cheese.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- For extra heat, add more Cajun seasoning to taste.
- These rolls can be made ahead and stored in the fridge before baking.
