Ingredients

  • 1 head green cabbage, chopped
  • 4 slices turkey bacon, diced
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 can diced tomatoes (14 oz)
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced turkey bacon and cook until crispy.
  2. Add the onions, carrots, and celery. Sauté for about 5 minutes until they soften.
  3. Stir in the garlic, chicken ham, and cooked turkey bacon.
  4. Pour in the chicken broth and add the chopped cabbage and diced tomatoes.
  5. Season with thyme, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer.
  6. Cover and cook for 30 minutes, stirring occasionally.
  7. Once the cabbage is tender, taste and adjust seasoning if necessary before serving.
