- 4 large potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup turkey bacon, cooked and crumbled
- 1 cup chicken ham, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup scallions, chopped
- In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until soft.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in the heavy cream, turkey bacon, chicken ham, salt, pepper, and paprika. Cook until heated through.
- Blend the soup for a creamy texture, if desired. Adjust seasoning to taste.
- Serve hot, garnished with scallions.
