- 1 pound beef chuck, cut into 1-inch pieces
- 1 cup pearl barley
- 4 cups beef broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- In a large pot, heat some oil over medium heat. Add the beef and brown on all sides.
- Add the onion, carrots, and celery. Sauté until the vegetables begin to soften.
- Stir in the garlic, thyme, and rosemary. Cook for an additional minute.
- Pour in the beef broth and bring to a boil.
- Add the barley and bay leaf. Reduce the heat and simmer for about 1.5 hours or until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
- For extra richness, add a splash of red wine during cooking.
