- 1 can white beans
- 4 slices turkey bacon
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add the onions, carrots, and celery to the pot, cooking until softened.
- Stir in the garlic and thyme, cooking for an additional minute.
- Add the white beans, chicken broth, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add the crumbled turkey bacon back into the pot before serving.
Notes
- For a chunkier soup, reserve some beans and mash them before adding.
- Feel free to add additional vegetables like spinach or kale.
