Ingredients
1 pound ground beef
1/2 cup rice
1 egg
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
8 cups beef broth
2 carrots, diced
2 zucchinis, diced
1 can (14.5 ounces) diced tomatoes
1/4 cup fresh cilantro, chopped
1 lime, juiced
Instructions
In a large bowl, combine ground beef, rice, egg, cumin, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Form the mixture into small meatballs, about 1 inch in diameter.
In a large pot, bring beef broth to a boil over medium-high heat.
Add the diced carrots and cook for 5 minutes.
