Ingredients

  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 3 cups water
  • 1 tablespoon olive oil
  • 1/2 pound Italian turkey sausage, crumbled
  • 1 onion, chopped
  • 1 pound potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 1/2 cup chopped fresh kale or spinach
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional)

Instructions

  • Brown the Sausage: Heat olive oil in a pot. Add turkey sausage and cook until browned. Remove sausage and set aside.
  • Sauté the Vegetables: In the same pot, cook the onion and garlic until softened.
  • Add Broth and Water: Pour in the chicken broth and water. Stir and bring to a simmer.
  • Add Potatoes: Add diced potatoes and simmer for 15 minutes until tender.
  • Add Cream, Peas, and Greens: Stir in the heavy cream, peas, and kale or spinach. Simmer for 5 more minutes.
  • Season and Serve: Season with salt and pepper to taste. Serve with optional grated Parmesan cheese.

Notes

  • Storage: Can be refrigerated for up to 3 days or frozen before adding cream. Reheat gently on the stovetop.
  • Variations: Use spicy sausage, substitute sweet potatoes, or add white beans for additional flavor and texture.
