Instructions
- Brown the Sausage: Heat olive oil in a pot. Add turkey sausage and cook until browned. Remove sausage and set aside.
- Sauté the Vegetables: In the same pot, cook the onion and garlic until softened.
- Add Broth and Water: Pour in the chicken broth and water. Stir and bring to a simmer.
- Add Potatoes: Add diced potatoes and simmer for 15 minutes until tender.
- Add Cream, Peas, and Greens: Stir in the heavy cream, peas, and kale or spinach. Simmer for 5 more minutes.
- Season and Serve: Season with salt and pepper to taste. Serve with optional grated Parmesan cheese.
