Description

Taco cupcakes are a delightful twist on the classic taco, combining all the flavors you love in a fun and convenient cupcake form. Perfect for parties, appetizers, or a unique dinner option, these taco cupcakes are sure to be a hit!

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/4 cup water
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 package wonton wrappers
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, sliced (optional)

Instructions

  • Preheat the oven to 180°C (350°F). Grease a 12-cup muffin tin.
  • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  • Add the taco seasoning mix and water to the skillet with the beef. Cook for 2-3 minutes, stirring occasionally, until the beef is well coated with the seasoning.
  • In a small bowl, combine the shredded cheddar and mozzarella cheeses.
  • Place a wonton wrapper into each muffin cup, pressing firmly into the bottom and up the sides.
  • Add a spoonful of refried beans into each wonton cup, followed by a spoonful of the seasoned beef mixture.
  • Sprinkle the cheese mixture evenly over the beef in each cup.
  • Place another wonton wrapper on top of each cup and press down gently. Add another layer of refried beans, beef mixture, and cheese.
  • Bake in the preheated oven for 15-20 minutes, or until the wonton wrappers are golden brown and the cheese is melted and bubbly.
  • Remove from the oven and let cool slightly. Top each taco cupcake with a dollop of sour cream, sliced black olives, diced tomatoes, chopped cilantro, and a slice of jalapeño if desired.

  • Ensure the wonton wrappers are firmly pressed into the muffin tin to hold their shape.
