- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/4 cup water
- 1 can (15 oz) refried beans
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 package wonton wrappers
- 1/2 cup sour cream
- 1/4 cup sliced black olives
- 1/4 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, sliced (optional)
Instructions
- Preheat the oven to 180°C (350°F). Grease a 12-cup muffin tin.
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet with the beef. Cook for 2-3 minutes, stirring occasionally, until the beef is well coated with the seasoning.
- In a small bowl, combine the shredded cheddar and mozzarella cheeses.
- Place a wonton wrapper into each muffin cup, pressing firmly into the bottom and up the sides.
- Add a spoonful of refried beans into each wonton cup, followed by a spoonful of the seasoned beef mixture.
- Sprinkle the cheese mixture evenly over the beef in each cup.
- Place another wonton wrapper on top of each cup and press down gently. Add another layer of refried beans, beef mixture, and cheese.
- Bake in the preheated oven for 15-20 minutes, or until the wonton wrappers are golden brown and the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Top each taco cupcake with a dollop of sour cream, sliced black olives, diced tomatoes, chopped cilantro, and a slice of jalapeño if desired.
