Description

A delightful and creative twist on traditional strawberry shortcake, this Strawberry Shortcake Sushi features a rolled strawberry cake filled with whipped cream, sliced into sushi-sized pieces, and decorated with fresh strawberries and white chocolate drizzle.

For the Cake Roll:

  • 1 box of strawberry cake mix (plus ingredients listed on the box: eggs, oil, water)
  • 1/4 cup powdered sugar (for dusting)

For the Filling:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Decoration:

  • Fresh strawberries, sliced
  • White chocolate, melted (for drizzling)
  • Crushed freeze-dried strawberries (optional)

Instructions

Prepare the Cake:

  1. Preheat the oven as per cake mix instructions.
  2. Line a 10×15 inch jelly roll pan with parchment paper and grease lightly.
  3. Prepare the cake mix as directed on the box, pour the batter into the pan, and spread evenly.
  4. Bake for 10-15 minutes or until a toothpick comes out clean.
  5. Let the cake cool for 5 minutes.

Roll the Cake:

  1. Dust a clean kitchen towel with powdered sugar.
  2. Turn the cake onto the towel, peel off the parchment paper, and roll the cake in the towel from the short end.
  3. Cool completely while rolled in the towel.

Prepare the Filling:

  1. Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  2. Unroll the cooled cake, spread the whipped cream filling, and re-roll the cake tightly.

Slice and Decorate:

  1. Slice the cake roll into sushi-sized pieces.
  2. Arrange on a serving platter.
  3. Top each piece with a fresh strawberry slice, drizzle with melted white chocolate, and optionally sprinkle with crushed freeze-dried strawberries.

  • Ensure the cake is fully cooled before unrolling to prevent cracking.
  • Use a sharp knife for clean slices.
