- 1/2 cup sun-dried tomatoes, chopped
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- 4 cups fresh spinach
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Boil salted water and cook spaghetti until al dente. Reserve 1/2 cup pasta water and drain.
- Heat olive oil in a skillet, sauté garlic and sun-dried tomatoes for 2-3 minutes. Add red pepper flakes if desired.
- Reduce heat, pour in heavy cream, and simmer for 5 minutes. Stir in Parmesan until melted and smooth.
- Add spinach, stirring until wilted. Toss in cooked spaghetti, adding reserved pasta water to adjust sauce consistency.
- Serve hot, garnished with basil or parsley.
