  • 12 oz spaghetti
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp olive oil (or oil from sun-dried tomatoes)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 4 cups fresh spinach
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Boil salted water and cook spaghetti until al dente. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a skillet, sauté garlic and sun-dried tomatoes for 2-3 minutes. Add red pepper flakes if desired.
  3. Reduce heat, pour in heavy cream, and simmer for 5 minutes. Stir in Parmesan until melted and smooth.
  4. Add spinach, stirring until wilted. Toss in cooked spaghetti, adding reserved pasta water to adjust sauce consistency.
  5. Serve hot, garnished with basil or parsley.

Notes

  • Adjust red pepper flakes for heat preference.
  • Substitute spinach with kale or arugula for a variation.
