Instructions

  • Preheat Oven: Set oven to 375°F (190°C) and grease or line a baking dish.
  • Prepare Chicken: Slice chicken breasts horizontally to create pockets. Season both sides with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Stuff Chicken: Fill each pocket with spinach, roasted red peppers, and mozzarella. Secure with toothpicks.
  • Optional Sear: Sear the stuffed chicken in olive oil for 2-3 minutes on each side (optional step).
  • Bake: Place the chicken in the oven for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  • Serve: Let the chicken rest for 5 minutes, remove toothpicks, and serve with desired sides.
