Ingredients

  • 2 tbsp olive oil
  • 2 chicken breasts, sliced into strips
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • 8 oz fettuccine pasta
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the fettuccine pasta according to package directions, drain, and set aside.
  • Heat olive oil in a skillet, cook the chicken strips until browned (6-8 minutes), then remove and set aside.
  • In the same skillet, sauté mushrooms for 3-4 minutes until softened. Add garlic and cook for another minute.
  • Pour in heavy cream and chicken broth, stirring to combine. Simmer for 5 minutes until the sauce thickens.
  • Stir in Parmesan cheese, salt, and pepper. Return chicken to the skillet and toss in the cooked pasta to coat.
  • Garnish with parsley and serve warm.

Notes

  • Substitute heavy cream with half-and-half for a lighter version.
