- For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the pumpkin puree and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Spread the batter evenly in the prepared baking pan.
- In a small bowl, combine flour, brown sugar, and cinnamon for the streusel topping. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle evenly over the batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the pan on a wire rack.
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract for the glaze. Drizzle over the cooled coffee cake before serving.

- Ensure the butter for the streusel topping is cold to achieve the right crumbly texture.
- Let the cake cool completely before adding the glaze to prevent it from melting into the cake.
