  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste

Instructions

  • In a large pot, heat olive oil over medium heat. Brown the ground beef and drain excess fat.
  • Add diced onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  • Stir in chili powder, cumin, paprika, oregano, salt, and pepper, coating the mixture with spices.
  • Add beef broth, diced tomatoes, tomato sauce, and pinto beans. Stir everything together.
  • Simmer on low heat, covered, for 30-40 minutes. For a thicker chili, simmer uncovered for an additional 10 minutes.
  • Adjust seasoning, serve hot, and top with cheese, sour cream, or green onions as desired.

Notes

  • This chili can be made spicier with added jalapeños or cayenne pepper.
  • It freezes well and can be stored for up to 3 months.
  • For a leaner version, substitute ground beef with ground turkey or chicken.
