  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • For the Filling:
    • 3 (8-ounce) packages cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1/2 cup sour cream
    • 1/2 cup pineapple juice
    • 1 tablespoon orange zest
    • 1 teaspoon vanilla extract
  • For the Swirl:
    • 1/2 cup pineapple chunks, drained
    • 1/2 cup orange marmalade
  • For the Topping (optional):
    • Whipped cream
    • Fresh pineapple slices
    • Orange slices

Instructions

  • For the Crust:
    • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
    • Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Press mixture into the bottom of the prepared pan.
    • Bake crust for 10 minutes. Remove from oven and let cool.
  • For the Filling:
    • In a large bowl, beat cream cheese and sugar until smooth.
    • Add eggs one at a time, beating well after each addition.
    • Add sour cream, pineapple juice, orange zest, and vanilla extract. Mix until combined and smooth.
  • For the Swirl:
    • Mash pineapple chunks in a small bowl.
    • Microwave orange marmalade for 30 seconds in another small bowl until softened.
  • Assembly:
    • Pour half of the cheesecake batter over the cooled crust.
    • Dollop half of the mashed pineapple over the batter and swirl gently with a knife.
    • Repeat with remaining batter and orange marmalade, swirling again to create a marbled effect.
    • Place the springform pan on a baking sheet and bake for 50-55 minutes, or until the center is almost set.
    • Turn off the oven and let the cheesecake cool in the oven with the door cracked open for 1 hour.
    • Remove from oven and cool completely on a wire rack. Refrigerate for at least 4 hours or overnight.
  • For Serving:
    • Remove sides of the springform pan and transfer cheesecake to a serving plate.
    • Top with whipped cream, fresh pineapple slices, and orange slices if desired.
