Description

A quick and healthy meal featuring cod fillets coated with a delicious Parmesan and almond flour crust, baked to golden perfection.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, melted
  • Lemon wedges for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a shallow bowl, combine Parmesan cheese, almond flour, paprika, garlic powder, salt, and black pepper.
  • Pat dry the cod fillets with paper towels.
  • Brush both sides of each cod fillet with melted butter.
  • Dredge each fillet in the Parmesan mixture, pressing gently to coat evenly.
  • Place the coated cod fillets on the prepared baking sheet.
  • Bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  • Remove from the oven and garnish with chopped parsley. Serve hot with lemon wedges.

Notes

  • Ensure the cod fillets are thoroughly dried before coating to achieve a crispier crust.
  • For an added kick, you can sprinkle a bit of cayenne pepper into the Parmesan mixture.
