- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 1/2 cups shredded sweetened coconut
- 1/2 cup sweetened condensed milk
- 12 oz semi-sweet or white chocolate chips
- 1 tablespoon coconut oil or shortening (optional)
Instructions
- Mix shredded coconut, condensed milk, vanilla extract, salt, and powdered sugar until a sticky dough forms.
- Roll into 1-inch balls and place on a parchment-lined baking sheet. Chill for 30-45 minutes.
- Melt chocolate chips with coconut oil (if using) in the microwave, stirring at 30-second intervals.
- Dip chilled coconut balls into melted chocolate and place them back on the parchment-lined sheet.
- Let the chocolate set at room temperature or chill in the fridge for 10-15 minutes.
- Serve or store in an airtight container in the refrigerator for up to one week.
Notes
- Use dark chocolate for a less sweet option.
- Add sprinkles or crushed nuts for decoration.
- To make dairy-free, use dairy-free sweetened condensed milk and chocolate chips.
